55g BUTTER
425G POTATOES, PEELED AND DICED
110G ONIONS, DICED
900ML CHICKEN OR VEG STOCK
120ML MILK
SALT AND BLACK PEPPER
How to
- MELT THE BUTTER IN A HEAVY SAUCEPAN. WHEN IT FOAMS, ADD THE POTATOES AND ONIONS AND TOSS THEM IN THE BUTTER.
- SPRINKLE WITH SALT AND PEPPER. COVER WITH THE LID OF THE SAUCEPAN. SWEAT ON A GENTLE HEAT FOR 10 MINUTES.
- MEANWHILE. BRING THE STOCK TO THE BOIL.
WHEN THE VEGETABLES ARE SOFT, ADD THE BOILING STOCK AND COOK FOR 10-15 MINUTES. - ADD THE MILK AND VEGETABLE TO THE SOUP IN A BLENDER OR FOOD PROCESSOR.
